I love making all sorts of cakes. Right now I am very much into Candy Box Cakes! Each one is lovingly created for the people in my life. I cover the hollowed out cake with fondant (sugar paste) icing and fill the centre with hand-made truffles or liqueur chocolates. Chocolate-dipped strawberries make lovely fillers too. I use regular fondant as well as chocolate-flavoured fondant to cover my cakes. Some of the cakes I make have a pretty basket weave pattern on the sides to create a slightly different look.
Cake flavours range from vanilla, chocolate fudge, orange to dried and fresh blueberry-almond, orange marmalade, date and so on. I try to match the fillers to the actual cake flavour, so the marmalade cake has white chocolate citrus truffles as the fillers and so on. My 11 year old daughter does beautiful sugar roses using fondant, which I use extensively to decorate my cakes.
