Tiramisu Cups

I think the Tiramisu is the ultimate favourite dessert. I have been making it for years, in the usual way by layering it in a large dish. Then I thought that they will look great and taste even better in little chocolate cups! Each cup is layered with coffee-liqueur infused sponge fingers and mascarpone custard, topped with a dusting of cocoa. It is then finished with white chocolate curls and chilled till serving time. They are perfect for special dinner parties and make very elegant-looking and delicious desserts. When I first served my Tiramisu, my husband meticulously ate the filling in the chocolate cup and left the chocolate uneaten! He didn’t realise that the cup was made of chocolate and was edible! Sweet & Spicy Chicken Bites

My Sweet and Spicy Chicken Bites is a very quick and easy chicken recipe, kind of an east-west fusion dish. Even though I used my homemade curry powder, the dish is only mildly spicy with a sweetish taste from the honey in it. Using a few ingredients, the recipe can be put together at a pinch to make a great chicken dish. My daughter is a picky eater who doesn’t like sweets ( I know…so unnatural!) but she loves this dish.

Candybox Cake

I love making all sorts of cakes. Right now I am very much into Candy Box Cakes! Each one is lovingly created for the people in my life. I cover the hollowed out cake with fondant (sugar paste) icing and fill the centre with hand-made truffles or liqueur chocolates. Chocolate-dipped strawberries make lovely fillers too. I use regular fondant as well as chocolate-flavoured fondant to cover my cakes. Some of the cakes I make have a pretty basket weave pattern on the sides to create a slightly different look.

Cake flavours range from vanilla, chocolate fudge, orange to dried and fresh blueberry-almond, orange marmalade, date and so on. I try to match the fillers to the actual cake flavour, so the marmalade cake has white chocolate citrus truffles as the fillers and so on. My 11 year old daughter does beautiful sugar roses using fondant, which I use extensively to decorate my cakes.
